Easy Veggie & Hummus Sandwiches
Sometimes you want a little switch from your typical sandwich, but that doesn’t mean it has to be something lengthy or difficult! Enjoy your favorite hummus + veggies in this easy sandwich combo! This also makes for a lovely picnic option, especially paired with a bag of your favorite chips, veggie sticks, and DIY Reusable Fabric Napkins. Pack up and have fun!
What You Need:
favorite sandwich bread
favorite green or lettuce
favorite veggies, sliced (tomato, cucumber, onion, bell peppers, and even carrots make great sandwich fillings!)
favorite sprouts or micro-greens (optional)
olive oil + apple cider vinegar + salt and pepper, or your favorite salad dressing
What You’ll D0:
If using oil+vinegar, mix 1 tsp each in a small bowl and set aside. Spread the hummus on each slice of bread, just like you would mayo or mustard. Next, layer your greens/lettuce and veggies, starting and ending with greens/lettuce (this will help keep the moisture from the veggies away from the bread), and including your dressing or oil+vinegar mix, + salt and pepper. Place your top piece of bread on and enjoy your sandwich!
