Christmas Peanut Blossom Cookies

These delicious cookies are a perfect mixture of peanut butter and chocolate, and using white whole wheat flour and/or coconut sugar makes them a bit healthier than the traditional recipe! If you’re unable to eat peanut butter, swap it with another nut butter of choice. You can also use dark chocolate chips in place of the milk chocolate, or even a piece of your favorite dark chocolate candy bar! However you make them, they are sure to be a Christmas hit!

What you’ll need:
1 cup butter, softened
1/2 tsp. salt
1 tsp. baking soda
1 cup creamy peanut butter (or nut butter of choice)
1 cup sugar (can sub with coconut sugar, or use half and half)
1 cup firmly packed brown sugar
2 eggs, well beaten
1 tsp. vanilla
2 cups sifted white whole wheat flour
1/2 cup additional sugar (for rolling before baking, optional) 2, 11 oz. bags chocolate kisses (or chocolate chips or bar)

Directions: Preheat oven to 325.

Combine butter, salt, soda, and peanut butter with mixer. Add sugar and brown sugar and cream, 3-5 minutes. Add well beaten eggs and vanilla and mix well. Add flour and blend well. Chill dough for 30 minutes.

Remove half the dough and allow remaining dough to chill until ready to use.

Shape dough into 1-inch balls and roll in additional sugar, if you’d like. Place 2 inches apart on cookie sheet. Bake for 10-12 minuets. Remove and place one chocolate kiss in the center of each cookie. Return to oven for 1 minute. Allow to cool on cookie sheet for 2 minuets then place on cooling rack until cool.
