Minty-chocolate Oat & Pretzel Bars

 

What You Need:

(makes 12 bars)

1 1/2 c ground, old-fashioned oatmeal (you can do this in a coffee bean grinder)

1/3 c coconut sugar (or sugar of choice) 6 tbsp coconut oil (or butter)

2 c pretzel sticks, broken into large pieces

1 c chopped chocolate peppermint candies (we used OCHO candies (https://www.ochocandy.com/product/christmas/), but any will do or you could just use a chocolate bar or chips!) square pan parchment paper

Minty-chocolate Oat & Pretzel Bars

What You’ll D0:
Preheat oven to 350.
Mix ground oatmeal, sugar, and coconut oil until combined.
Using a wooden spoon, evenly press mixture into a square baking ban lined with parchment paper. Bake for 15-20 mins, until a little bubbly and lightly browned.
Remove from oven and top with pretzels, then candies and return to oven for about 8 mins (until chocolate is melted).
Remove from oven and spread chocolate with knife or spatula. Refrigerate overnight then cut into bars.
