Sweet Potato and Apple Crisp With Raisins
This sweet potato and apple crisp with raisins, is easy, delicious, and perfectly fall! Use your favorite nuts, flours, and spices to give the taste you like most! If you don’t like raisins, you can definitely leave them out. Also, you can use all apples or all sweet potatoes, or the combination like we have here.
What You Need:
3/4 c oatmeal
3/4 c oat flour (make this by grinding oatmeal), or you can use any flour variety you have/like
1/4 c coconut sugar
1/4 c chopped nuts
1/3 c olive oil
1/2 tsp salt
1 tbsp cornstarch
4 c chopped apples
2 c chopped sweet potatoes (roasted or steamed)
1/4 c raisins
6 tbsp maple syrup
1 tsp vanilla extract
1 1/2 tsp pumpkin spice
2 tsp cinnamon
1/2 tsp salt
What You’ll D0:
Chop sweet potatoes and roast in 400 degree oven or steam on the stovetop for about 20 mins. While these cook, prepare the rest of your ingredients:
Mix oatmeal, oat flour, coconut sugar, nuts, oil, and 1/2 tsp salt. Set aside.
Chop apples, add raisins. Set aside.
Mix maple syrup, vanilla, spices, and 1/2 tsp salt. Set aside.
Once sweet potatoes are ready, add to a bowl with the apples and raisins, then mix in the cornstarch. Add syrup/spices mix, then pour into baking dish. Top with oatmeal mix and bake for 35-40 mins until starting to bubble. Allow to cool for 10 mins then enjoy!
