Dark Chocolate Frozen Bananas
In the cooler months, using overripe bananas for banana bread is everyone’s favorite, but in the summer, sometimes it’s hard to figure out what to do with those extra bananas! Well, we thought of something! Dark chocolate frozen bananas! Sure, some ice cream shops have been selling these for ages, so why not make them yourself at home? Just a few easy steps with ingredients you more-than-likely already have, and you’re all set with a delicious, cooling, summer treat!
What You Need:
4 bananas
10-12 oz. dark chocolate (chips, chunks, or a bar broken into pieces)
1 tbsp olive or coconut oil
Toppings: coconut flakes, crushed dried strawberries, crushed dried blueberries, or crushed nuts all work wonderfully! You could also use sprinkles if you’d like!
You’ll also need a cookie sheet and parchment paper to freeze the bananas. Popsicle sticks are helpful for turning to cover the bananas front and back as well as make them a bit easier to eat, but you can just as easily make them without.
What You’ll D0:
Break bananas in half. If using the popsicle sticks, gently place inside the banana about half way. If the banana breaks a little, gently squeeze it back together around the stick. Place bananas on the covered cookie sheet and freeze for 4-6 hrs, or overnight if desired.
Once bananas are frozen, place chocolate and oil in a pan on low heat and stir until all of the chocolate pieces are melted. Remove cookie sheet with bananas from freezer and spoon melted chocolate over bananas, then add toppings (if using). Do this on all the bananas, one side only, and then turn them over to repeat the process on the other side of the banana. Return to the freezer for about 20 mins, or until chocolate is set.
Store in freezer until ready to eat. If you’re not eating them as soon as the chocolate is set, store in an air-tight container.
Note: You can reduce this based on however many bananas you have, just make sure you reduce the chocolate/toppings as well or you’ll be stuck with too much melted chocolate.
